With Jozua Jaring, not everything is as it seems. He pays great attention to detail in the meticulous presentation of his dishes and likes to surprise diners with contrasting colours and forms. This is a restaurant with a real "wow" factor – chef Jaring puts his own exciting spin on classic flavours, taking your taste buds on a culinary adventure: conjuring up vegetable ice cream concoctions, dabbling with Asian citrus notes or rounding off a dish with a classic, deeply flavoursome vegetable jus. Such inspirations take this chef's top-quality ingredients to the next level. Think sweet and smoky barbecued langoustine accompanied by al dente ravioli stuffed with langoustine meat, along with various textures of carrot and a full-bodied bisque. This chef has mastered the art of working with fish and seafood, and his creativity does not lose any momentum when it comes to devising vegetarian dishes. This characterful building has an equally tasteful decor: a little rustic, a tad eclectic, but very much on trend – with an imposing open Molteni kitchen serving as the hub of the action.
